Mole cake with Bananas

The mole cake is the perfect kid’s birthday cake – says, my daughter. She was thrilled when she got to call her own a mole cake with excavators on it for her birthday.

Fantastic chocolate biscuit, banana, and fluffy cream combined in a childhood memory! And the best thing about it: this cake is easy to make even with bustling everyday life and can be prepared in a child-friendly way.

I baked the bases for this cake the night before. The chocolate bases were able to cool down really well overnight. On the birthday morning, I got up half an hour before everyone else, hollowed out the bottom of the cake, filled it with banana and cream, and topped the chocolate crumbs with the little baggers. A complete success!

Tip for the little ones: You can replace the sugar in the recipe with birch sugar (xylitol) and reduce it. If you want to work completely naturally, you can use two pureed bananas to sweeten the cake base.

Makes a 24cm cake with 12-15 slices Prep time:

2 hours total

Baking time: 45 minutes

Instructions:

Preheat the oven to 180 °C top/bottom heat.

In a mixing bowl, mix flour, sugar, starch, cocoa, baking powder, vanilla, and salt. Add oil, oat milk, water, and vinegar. Using a whisk, quickly knead by hand to form a homogeneous dough.

Grease a 24 cm springform pan with some vegetable margarine and pour in the batter. Bake on the middle shelf for 40-45 minutes. Then let cool completely in the mold.

Carefully remove the chocolate cake from the mold and place it on a cake plate. Now cut the cake with a knife about 2 cm from the edge up to 1 cm above the bottom. Then scoop out the chocolate cake with a spoon and crumble the scooped out into a bowl.

Halve the bananas and place them on the chocolate base. Whip the cream with the whipped cream stiffener, sugar, and vanilla sugar, then fold in the chocolate shavings. Spread the whipped cream

over the bananas in a dome shape. Finally spread the chocolate cake crumbs all over the cream dome and press down lightly. enjoy bit by bit.

  • 220 g Wheat flour type 550 or spelled flour type 630
  • 130 g of sugar
  • 2 tbsp Cornstarch
  • 30 g Cocoa
  • ¾ Pack baking powder
  • 1 pinch of grounded vanilla
  • 1 pinch of salt
  • 90 grams of vegetable oil
  • 150 mL Oat drink or other plant drink
  • 150 mL Sparkling mineral water
  • 1 tbsp Apple cider vinegar
  • Vegetable margarine for the mold

For the filling:

  • 2-3 Bananas
  • 400 g Vegan whipped cream
  • 3 Packs of cream stiffeners
  • 3 tbsp Sugar
  • 1 Packet of vanilla sugar
  • 50 g Grated dark chocolate
